摘 要
随着全球食品供应链日益复杂化,食品加工企业面临的质量与安全挑战愈发严峻,构建高效的质量管理体系已成为保障食品安全的关键所在。本研究旨在探讨质量管理体系在食品加工企业中的应用机制及其对食品安全的保障作用,通过文献分析与案例研究相结合的方法,选取典型食品加工企业作为研究对象,深入剖析其质量管理体系的运行模式、关键控制点及潜在改进空间。研究发现,基于ISO 9001和HACCP等标准构建的综合质量管理体系能够显著提升企业的食品安全管理水平,尤其是在原料控制、生产过程监控及产品追溯等方面表现出较强的优势。此外,本研究创新性地提出将数字化技术融入传统质量管理体系,以实现更精准的风险预测与实时监控,从而为行业提供了新的实践方向。最终得出结论,完善的质量管理体系不仅是企业合规的基础,更是提升消费者信任与市场竞争力的核心要素,而数字化转型则为未来食品安全管理开辟了全新路径。

Abstract
As the global food supply chain becomes increasingly complex, food processing enterprises are facing more severe challenges in terms of quality and safety, making the establishment of an efficient quality management system (QMS) a critical factor in ensuring food safety. This study investigates the application mechanisms of QMS in food processing enterprises and its role in safeguarding food safety by combining literature analysis with case studies, selecting representative food processing enterprises as research subjects to thoroughly analyze the operational models of their QMS, key control points, and potential areas for improvement. The findings indicate that an integrated QMS based on standards such as ISO 9001 and HACCP can significantly enhance enterprises' food safety management capabilities, demonstrating strong advantages particularly in raw material control, production process monitoring, and product traceability. Furthermore, this study innovatively proposes the integration of digital technologies into traditional QMS to achieve more accurate risk prediction and real-time monitoring, thereby providing new practical directions for the industry. It is concluded that a well-established QMS is not only the foundation for enterprise compliance but also a core element in enhancing consumer trust and market competitiveness, while digital transformation offers a new pathway for future food safety management.
