摘 要
食品包装作为保护食品品质的重要手段,其对食品感官特性的影响日益受到关注。本研究旨在探讨不同包装材料与技术对食品感官品质的动态影响,以期为优化包装设计提供科学依据。通过选取典型食品样品并采用控制变量法,结合感官评价、理化分析及消费者偏好调查等多维度研究方法,系统评估了包装透气性、阻光性及抗氧化性能对食品色泽、气味、口感和外观等感官指标的作用机制。研究发现,高阻隔性包装能显著延缓食品氧化和水分流失,从而有效保持食品原有风味和质地;而活性包装技术的应用进一步提升了食品的保鲜效果,延长了感官品质的稳定期。本研究创新性地揭示了包装特性与食品感官品质变化之间的量化关系,并建立了相应的预测模型,为精准化包装设计提供了理论支持,同时为提升消费者体验和减少食品浪费提供了新思路。

Abstract
Food packaging, as a critical means of protecting food quality, has increasingly drawn attention for its impact on sensory characteristics. This study aims to investigate the dynamic effects of different packaging materials and technologies on the sensory quality of food, providing scientific evidence for optimizing packaging design. By selecting typical food samples and employing the controlled variable method, combined with sensory evaluation, physicochemical analysis, and consumer preference surveys, this research systematically assessed the mechanisms by which packaging breathability, light barrier properties, and antioxidant performance influence sensory indicators such as color, aroma, texture, and appearance. The findings indicate that high-barrier packaging significantly slows down food oxidation and moisture loss, effectively preserving the original flavor and texture. Furthermore, the application of active packaging technology enhances food preservation, extending the stability period of sensory quality. Innovatively, this study reveals the quantitative relationship between packaging characteristics and changes in food sensory quality and establishes corresponding predictive models, offering theoretical support for precise packaging design. Additionally, it provides new insights into enhancing consumer experience and reducing food waste.
