摘 要
纳米技术作为现代科技的重要分支,近年来在食品保鲜领域展现出广阔的应用前景。本研究旨在探讨纳米材料在食品保鲜中的作用机制及其安全性评估,以期为食品工业提供科学依据和技术支持。通过文献分析与实验验证相结合的方法,系统研究了多种纳米材料(如银纳米粒子、氧化锌纳米颗粒等)对微生物活性的抑制效果及对食品品质的保护作用。研究发现,纳米材料能够显著延长食品的保鲜周期,同时有效降低腐败和病原微生物的滋生风险。此外,本研究还构建了一套基于多指标综合评估的安全性评价体系,用于量化纳米材料在实际应用中的潜在风险。创新点在于首次提出了一种动态监测纳米材料迁移行为的技术方案,并结合毒理学数据对其长期安全性进行了深入分析。研究表明,在合理控制使用剂量和条件的前提下,纳米技术可安全高效地应用于食品保鲜,为提升食品安全性和延长货架期提供了新思路。这一成果不仅丰富了食品科学理论,也为相关法规标准的制定奠定了基础。

Abstract
Nanotechnology, as a crucial branch of modern science and technology, has demonstrated extensive application prospects in the field of food preservation in recent years. This study aims to investigate the mechanisms of action of nanomaterials in food preservation and assess their safety, thereby providing scientific evidence and technical support for the food industry. By integrating literature analysis with experimental validation, this research systematically examined the inhibitory effects of various nanomaterials, such as silver nanoparticles and zinc oxide nanoparticles, on microbial activity and their protective roles in maintaining food quality. The findings indicate that nanomaterials can significantly extend the shelf life of food while effectively reducing the risk of spoilage and pathogenic microbial proliferation. Furthermore, this study developed a comprehensive safety evaluation system based on multiple indicators to quantify the potential risks associated with the practical application of nanomaterials. An innovative contribution of this work is the proposal of a dynamic monitoring technique for assessing the migration behavior of nanomaterials, which was combined with toxicological data to conduct an in-depth analysis of their long-term safety. The results suggest that, under conditions of appropriately controlled dosage and usage parameters, nanotechnology can be safely and efficiently applied to food preservation, offering new strategies to enhance food safety and prolong shelf life. This achievement not only enriches the theoretical fr amework of food science but also provides a foundation for the formulation of relevant regulatory standards.
