Abstract

With the increasing complexity of the global food supply chain and the heightened consumer demand for food safety and quality, meat preservation technology has become a critical research focus in the field of food science. This study aims to investigate the current applications, key challenges, and optimization pathways of modern food preservation technologies in meat preservation. By integrating literature review with experimental validation, this study systematically analyzes the mechanisms and limitations of various preservation techniques, including modified atmosphere packaging, low-temperature refrigeration, bio-preservatives, and emerging nanomaterials. The findings indicate that while traditional preservation methods effectively delay meat spoilage, they fall short in maintaining sensory quality and nutritional components. In contrast, emerging technologies demonstrate higher preservation efficiency and broader application potential. Innovatively, this study proposes an integrated preservation strategy based on multi-technology synergy, which significantly extends the shelf life and enhances the quality stability of meat products. Furthermore, the study highlights the constraining effects of factors such as technological cost, environmental impact, and consumer acceptance on practical applications, providing valuable insights for future technological development. Overall, this study not only deepens the understanding of meat preservation technologies but also offers scientific evidence and technical support for industry practices.
